Macho Nacho

Directions
Spoon chili over chips. Sprinkle with cheese. Heat in microwave oven or broil until cheese melts, 1 to 2 minutes.

- 1/2 (15-ounce) bag tortilla chips, any flavor
- 1/2 cup shredded cheese such as Cheddar, Monterey Jack or American

Beef and Beer Stew with Onions

Servings: 8
Prep Time: 30 minutes
Cook Time: 5 hours

Directions
Heat butter in a large skillet and brown the beef. Place browned beef in a slow cooker. Add onions and garlic in the skillet to brown lightly, and then place them into the slow cooker with the beef. Add the water, beef granules, thyme, beer, brown sugar and mustard to the slow cooker. Cover and cook on low for 5-7 hours. Add cornstarch mixture to the stew and continue to cook until thicken, about 20 minutes.

Ingredients
- 1 tablespoon HERB-OX® Beef Bouillon Granules
- 1 teaspoon thyme
- 2 cups dark beer--with or without alcohol
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
- 2 tablespoons cornstarch dissolved in 2 tablespoons water
- 2 tablespoons butter
- 3 pounds lean beef stew meat
- 6 cups sliced onions
- 4 cloves garlic, minced
- 1 cup water

Directions
Heat oil in large saucepan or Dutch oven. Add carrots, celery and onion and cook until tender (about 3 minutes). Stir in chicken broth. Add whole chicken. Bring to boiling, then reduce heat. Cover and simmer for about 1 hour or until chicken is thoroughly cooked. Remove chicken, cool slightly. Stir mole into broth and continue to simmer. Remove meat from bones and return meat to broth. Stir in raisins and crushed chips. Heat thoroughly; stir occasionally.

Nacho Cheese

Ham and Cheese Pie

Servings: 8
Prep Time: 15 minutes
Cook Time: 45 minutes

Directions
Heat oven to 350°F. In bowl, combine cheeses. Sprinkle half of cheese mixture over pie crust. Sprinkle with ham. In bowl, beat together half-n-half, eggs, and pepper; pour over ham. Sprinkle ham with remaining cheese mixture. Bake 45 minutes or until knife inserted near center comes out clean. Let stand 10 minutes before serving.

Ingredients
- 1 cup shredded Swiss cheese
- 1/2 cup grated parmesan cheese
- 1/2 cup shredded provolone cheese
- 1 (9-inch) baked pie crust
- 1 1/2 cups HORMEL® CURE 81® Ham , diced
- 1 cup half-and-half
- 4 eggs
- 1/4 teaspoon coarsely ground black pepper
